And then there's the little bit of icing. making the taste not too sweet But more important than the shape is the very fragrant butter and almond cake. and cookie dough It's also very crumbly. It's like eating and I really like it.
Therefore, a Misson immediately appeared that I should make a cake like this, haha.
I tried several rounds. Because even though it's a cake that looks normal, it's not easy to make it nice and crumbly.
Try the method of cutting butter into the dough. (Like making tart dough) or using a different type of flour. Including the amount of fat and dry matter that needs to be adjusted. To get this cake recipe, I eat a lot of butter and flour.
Finally the formula is perfect.
By the way, the perfect way to make cookies is to beat the butter. This is because churning the butter adds air to the dough, which is another part of the cake that makes it lighter and crumbier. in the dough I use it as all-purpose flour. Because enough to be used as cake dough. Cookies come out firmer. Maybe because wheat flour has more protein. This creates the texture of the pastries and the structure of the cake instead of puffing up a bit as it bakes.
I've tested it several times. This recipe has nothing to be careful about. But all you have to do is cut the almonds into small pieces. And when making the dough don't press too much.
Almond Snowball
Makes 24-25 pieces
30 grams ……………………… almonds
75 grams ……………………… unsalted butter
1/2 teaspoon ……………………. vanilla extract
1/8 teaspoon …………………………. salt
20 grams ……………………… icing sugar
70 grams ……………………… all-purpose flour
15 grams ……………………… ground almonds
15 grams ……………………… corn flour
……………………………………. Icing sugar to cover cake

Bake the almonds in the oven for about 8 minutes.
Finely chop the almonds and set aside.
Beat butter with salt. and vanilla extract until smooth.
Add icing sugar and beat until combined.
Sift flour, ground almonds and cornstarch into a bowl.
Add chopped almonds.
mix well
Remove dough from bowl and gently press down.
Form into bars, size 3×25 cm.
Chill in the refrigerator for 2 hours.
Before baking, preheat the oven to 170℃.
Cut the cookie dough into strips, about 1 cm thick per piece.
You will get 24-25 pieces.
Bake in the oven at 170℃ for 18-20 minutes.
Let the cookies cool completely.
then sprinkle with icing sugar
