The dessert brought out today is a dessert that everyone likes, but many people say that it is difficult to make. So today we will solve the secret of Scones together ^^

People who have looked at previous recipes will notice that I often use dough instead of kneading, yes, kneading introduces the gluten (protein) in the dough and the dough becomes sticky.

And why is this recipe massageable!!!!

Easy, because we have eliminated the possibility of developing gluten.

by mixing the flour with the butter first which causes the butterfat to coat the dough When kneading the dough So the flour doesn't produce as much gluten. Include the amount of water and fat in this formula. in the right amount done after the massage We got soft scones. and not too fragile

Because flour has a certain degree of development of gluten. Therefore, this recipe should not make the dough too thick because it will make the baked scones lose their shape easily.

I use a small cutter. You can get about 12 small scones, but you can use a knife to cut them into large squares (5-5.5 cm, will bake about 15-16 minutes), because once the slices are wider there is a chance they will lose their shape, when baked it will decrease.

Simple Scones (knead!)

Makes 12 small scones

200 grams …………… all purpose flour

35 grams ……………… granulated sugar

7 grams ………………….. developer powder

1/8 tsp …………… salt

75 gram ……………….. Unsalted butter, cold, cut into 1 cm

70 grams ……………… whipped cream

……………………… Whipped cream, for brushing the cake

Put flour, sugar, baking powder and salt into a bowl. then stir well

Put butter in a bowl.

Mix with a cookie cutter or fingertips.

until it becomes like breadcrumbs

Add whipped cream and eggs to it.

take it out of the bowl

Massage for 1-2 minutes.

until smooth

Flatten the dough slightly and cut it in half.

Stack the dough together.

Press until 1.5-2 cm thick, wrap and refrigerate for about 2 hours.

Before baking, preheat the oven to 200℃.

Dip the 4.5 cm pieces into the flour bowl. cut with a cutter

Combine the remaining dough together, use all the dough, you will have about 12 pieces.

Brush the top with whipped cream.

Bake for 14 minutes in an oven preheated to 200℃.

Let cool on a wire rack before serving.
