This recipe starts with nostalgia. Anyone close to us may remember that there used to be Rotiboy branded bread being sold in Thailand. and very loud. At that time we had to queue up to buy it, because it was selling well and it tasted good too.

But like many brands, when the boom period ended, it disappeared. and can't be bought But sometimes we will still miss these flavors.

As soon as he spoke up, the members at home told him to make some for him.

Actually, I used to make something similar to this before, but last time I made it brown so it didn't look like what they sell.

It is basically a soft bun filled with butter or cream and topped with coffee cake.

Tried 2-3 rounds and finally got the Mexican coffee bun that I love at home. Butter inside I use salted butter. and put in the same amount compared to the size of the dough, so when wrapping it must be wrapped well. Otherwise, the butter will easily escape. And it is advisable to use a tray with a rim. because if the butter oozes out during baking the oven doesn't fall apart and we can rest the bread in the pan for a while. so it can absorb a little butter ^^

11 grams ……………………… milk powder

1.8 g …………………………. yeast

53 grams …………………………. milk

18 grams ……………………… unsalted butter

60 grams ……………………… Salted butter (cut into pieces, 10 g each)

Place the bread flour, yeast, sugar and powdered milk in a bowl. pull people together

Place the dough into a bowl, cover with plastic wrap and let rise for 60 minutes.

Divide the salted butter into 10g chunks and place in the fridge to set aside.

Put sugar in it. then hit them together

Add eggs and instant coffee powder, mix well.

Add flour

Place the dough in a piping bag and set aside.

When the dough is ready, cut it into 6 equal pieces.

Form into a ball.

Cover with plastic and set aside for 15 minutes.

Roll out the dough and place the butter in the middle.

Cover with plastic and let rise for another 30 minutes.

Meanwhile, preheat the oven to 190℃.
