I've been feeling unwell for the past week. Maybe because the weather has changed a lot recently. Not even sick, but when the weather is very hot and stuffy. Anyway, it will feel very headache. Therefore, I don't have many ideas for making desserts.
But trying to find something to refresh me So I thought of a dessert that uses fruit as an ingredient. Especially sour, sweet berries, that sort of thing.
So today, I have this recipe for you.
It's a small piece of strawberry tart. At the bottom of the tart is a fragrant almond cream. And the top is fresh strawberry for a sweet and refreshing taste.
Personally, I really like this bitch site. That is, some people may feel that they are wasting their time in the dungeons. but enough to keep doing More eloquent haha, just the right size to eat and cute too.
This tart can be prepared in advance. Then squeeze out the cream and garnish with fresh strawberries before serving, cute and simple.
Mini Strawberry Tarts
Makes 12 (6cm tarts)
tart dough
120 grams ……………….. all-purpose flour
50 grams ………………… icing sugar
20 grams ………………… ground almonds
1/8 tsp …………… salt
75 grams …………………. Unsalted butter cut into about 1.5 cm pieces.
15 grams ………………… eggs
almond cream
60 grams ……………… unsalted butter, softened
1/2 tsp …………… vanilla extract
1/8 tsp …………… salt
60 grams ……………… granulated sugar
45 grams ……………………. eggs
75 grams ……………… ground almonds
14 grams ……………… cake flour
Strawberry filling
110 grams ………………….. Strawberries, peas removed before weighing
10 grams ………………… granulated sugar
10 grams ………………… lemon juice
whipped cream
150 gram ……………… whipped cream
1/2 teaspoon …………… vanilla extract
1 teaspoon ………………… Kirsch (optional)
15g ……………………. icing sugar
12-13 balls ………………… fresh strawberries

Place flour, icing sugar, salt and ground almonds in a blender bowl.
mingle together.
Add butter and whisk to combine.
put eggs
Blend until it forms lumps.
Remove the dough from the bowl of the machine. then press the dough with your palms
until the dough is smooth
Roll out the dough 3 mm thick.
Chill in the refrigerator for 1 hour.
Beat butter with salt. and vanilla until smooth, add sugar and beat until combined.
Add eggs and beat until combined.
Sift flour and ground almonds.

Place the almond cream in a piping bag, set aside.
Cut with an 8 cm cutter.
Roll the tart dough into 12 tart circles measuring 6×2 cm.
Rest in the refrigerator for 30 minutes.
Place the strawberries, granulated sugar and lemon juice in a bowl and mix thoroughly.
Microwave at 600W for 4 minutes.
Stir and let cool completely before use.
Before baking, preheat the oven to 180℃.
Divide the strawberry filling into the tart dough.
Squeeze the almond cream into it.

Bake in preheated oven at 180℃ for 20-25 minutes.
Set aside to cool completely on a wire rack.
Whip whipped cream with vanilla extract, icing sugar and Kirsch liqueur (if using) until stiff peaks form.
